It’s Tasty Tuesday! A weekly feature where every Tuesday we share a weight loss surgery friendly recipe for you to enjoy!
Since it’s winter, snowy and cold here in Utah where Rocky Mountain Associated Physician’s (RMAP) is located, it’s officially soup and chili season. There is just something comforting about dumping delicious, healthy ingredients into a Dutch oven, crock pot, or large saucepan to help warm you and your family up on cold Utah winter days.
Yields 8 servings
2 pounds beef, cut into stewing pieces
4 turnips, peeled and cut into chunks
2 onion, coarsely chopped
1 1/2 cups diced tomatoes, stewed
1 cup zucchini, sliced
1 tsp. rosemary
1 tsp. oregano
1 tsp. thyme
6 drops Tabasco sauce
Salt and pepper, to taste
2 tsp. Thicknthin Not Starch
1.) Brown beef in a skillet, in a small amount of oil. You are just searing the outside, don’t worry about cooking through.
2.) Place all ingredients in a stew pot, add enough water to just cover. Heat to boiling.
3.) Reduce heat and simmer for at least 45 minutes. Add the Thicknthin Not Starch.
4.) Return to a boil and allow to boil until broth is thicker then put into bowls and serve.

**Chef’s Note: You can add some other vegetables such as eggplant, green beans, but be sure to adjust the carb counts.
