Mini Crustless Quiches*

Makes 12 servings
Prep time: 5 minutes Cook time: 28 minutes
Serving size: 1 quiche approx. 147 calories

 

Ingredients:
2 ¼ cup liquid egg substitute
1 cup skim milk
4 whole scallions, sliced
½ cup tomato, diced
1 ½ cup shredded low-fat Swiss cheese
½ cup turkey-bacon, chopped
1 tsp. freshly cracked black pepper

Directions:

  1. Preheat oven to 360°. Lightly coat a 12 (1/2 cup) muffin tin with cooking spray.
  2. In a large bowl, which together egg substitute and skim milk. Stir in scallions, tomato, Swiss cheese, turkey-bacon and pepper.
  3. Divide egg mixture order phentermine online legally evenly among the prepared muffin cups and bake for 25-28 minutes, or until eggs are cooked and begin to brown on top.
  4. Run knife around the edges to loosen quiches from the cups.
  5. Serve and enjoy!
